Sweet Potato Ound Cake Recipe

Ingredients:

  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
  • 1 1/2 cups unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 10-inch bundt cake pan.
  2. Peel and cube the sweet potatoes, and boil them in a large pot of salted water until they are tender. Drain the sweet potatoes, then mash them in a mixing bowl with a fork or potato masher until they are smooth.
  3. In a separate mixing bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy.
  4. Add the eggs to the butter-sugar mixture one at a time, beating well after each addition.
  5. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a separate mixing bowl.
  6. Add the flour mixture to the butter-sugar-egg mixture in three parts, alternating with the mashed sweet potatoes, and mixing well after each addition.
  7. Stir in the vanilla extract until the batter is smooth.
  8. Pour the batter into the prepared bundt pan, and smooth the surface with a spatula.
  9. Bake the sweet potato pound cake in the preheated oven for 1 hour, or until a toothpick inserted into the center of the cake comes out clean.
  10. Allow the cake to cool in the pan for 10-15 minutes, then transfer it to a wire rack to cool completely.
  11. Once the cake is cooled, slice and serve as desired.
