Easy Coconut Macaroons

Ingredients:

  • 2 1/2 cups sweetened shredded coconut
  • 2/3 cup sweetened condensed milk
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 2 egg whites

Preparation time: 10 minutes Baking time: 15 minutes

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, stir together the shredded coconut, sweetened condensed milk, vanilla extract, and salt until well combined.
  3. In a separate mixing bowl, beat the egg whites with an electric mixer until stiff peaks form.
  4. Fold the beaten egg whites into the coconut mixture until well combined.
  5. Using a cookie scoop or spoon, drop the coconut mixture onto the prepared baking sheet, leaving about 2 inches of space between each macaroon.
  6. Bake the macaroons in the preheated oven for 15 minutes, or until the edges are lightly golden brown.
  7. Remove the macaroons from the oven and allow them to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  8. Once the macaroons are cooled, serve and enjoy!
