  • 4 large flour tortillas
  • 8 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 4 slices of cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro (optional)
  • Hot sauce or salsa for serving


  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat a large non-stick skillet over medium heat. Add the diced bell peppers and onions and sauté until they are softened, about 5 minutes.
  3. Pour the egg mixture into the skillet with the bell peppers and onions. Stir gently and cook until the eggs are scrambled and cooked through.
  4. Warm the flour tortillas in a microwave or on a griddle for a few seconds to make them pliable.
  5. Place a spoonful of the scrambled eggs in the center of each tortilla. Top with crumbled bacon, shredded cheddar cheese, diced tomatoes, and chopped cilantro (if desired).
  6. Fold the sides of the tortilla over the filling, then roll it up tightly to form a burrito shape.
  7. Repeat the process with the remaining tortillas and filling.
  8. Heat a large skillet or griddle over medium heat. Place the burritos seam-side down on the skillet and cook for a few minutes on each side until the tortilla is golden brown and crispy.
  9. Remove the burritos from the skillet and let them cool slightly before serving.
  10. Serve the breakfast burritos with hot sauce or salsa on the side for added flavor.
