Caramel Apple Crisp Cheesecake
*Ingredients
+Graham/Oat Cortex:
°1⁄4 cup of brown sugar
°1 cup cracker crumbs graham
°3⁄4 cup rolled oats
°1⁄2 Melted Butter Cup
+Cheesecake:
°2 8 ounces of soft cream cheese
°2 tbsp corn starch
°1⁄4 cup of brown sugar
°1⁄4 White Sugar Cup
°1⁄8 teaspoon ginger
°2 teaspoons vanilla extract
°1⁄2 teaspoon cinnamon
+Apple Crisp Topping:
°1⁄4 cup of flour for all purposes
°1⁄4 cup rolled oats
°1⁄4 cup of brown sugar
°1⁄2 teaspoon cinnamon
°2 tbsp coconut oil
°2 medium to large apple, peeled and thinly sliced
°Top caramel, if you wish
* Methods
Preheat oven to 350F.
In the mixing bowl, mix Graham cracker crumbs, cabbage oats, melted butter and brown sugar together.
Press inside the bottom of the springform pan 9 or 10 inches.
Bake for 5 minutes. Remove from the oven to cool.
Meanwhile, in an electric mixer bowl, mix the cream cheese, brown sugar, white sugar, cinnamon, ginger, cornstarch and vanilla.
Once well combined, pour over the cracking/oatmeal crust of Graham.
To start your apple layer, arrange thin apple slices over the cheesecake in one layer.
Top with Apple Crisp Topping. Bake at 350F for 40-50 minutes.
Once cooking is finished, cool for 15 minutes, then refrigerate overnight
