Ingredients:

  • 9 lasagna noodles, cooked according to package directions
  • 1/2 pound cooked and shredded chicken
  • 1/2 pound cooked and peeled shrimp
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons butter
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 can (8 ounces) tomato sauce
  • 1/4 cup chicken broth
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Preparation time: 30 minutes Cooking time: 40 minutes

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix together the chicken, shrimp, and Cajun seasoning. Set aside.
  3. In a large skillet, melt the butter over medium heat. Add the red and green bell peppers, onion, and garlic, and cook until the vegetables are soft, about 5 minutes.
  4. Add the diced tomatoes, tomato sauce, chicken broth, heavy cream, salt, black pepper, cayenne pepper, paprika, and garlic powder. Stir to combine and bring the mixture to a simmer.
  5. Reduce the heat to low and let the mixture simmer for 10 minutes.
  6. Layer 3 lasagna noodles in the bottom of the prepared baking dish. Spread one-third of the tomato mixture over the noodles, then sprinkle one-third of the chicken and shrimp mixture on top. Sprinkle with one-third of the Parmesan cheese and mozzarella cheese. Repeat the layering process two more times, ending with a layer of cheese on top.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  9. Let the lasagna cool for 10 minutes before slicing and serving.
