Strawberry Pie Cake


  • 1 unbaked 9-inch pie crust
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups fresh strawberries, sliced
  • Whipped cream or ice cream, for serving (optional)


  1. Preheat your oven to 350°F (175°C).
  2. Place the pie crust in a 9-inch cake pan, trimming any excess edges. Set aside.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a separate large mixing bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.
  5. Add in the eggs and vanilla extract, and mix until well combined.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until the batter is smooth.
  7. Gently fold in the sliced strawberries.
  8. Pour the batter into the prepared pie crust and spread it out evenly.
  9. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the pie cake cool completely in the pan on a wire rack before slicing and serving.
  11. Serve with whipped cream or ice cream, if desired.
