Ingredients:

  • 1 lb. mixed vegetables (such as broccoli, cauliflower, carrots, bell peppers, onions, and/or zucchini)
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1 tsp. dried herbs (such as thyme, rosemary, or oregano)

Instructions:

  1. Preheat the oven to 425°F (220°C).
  2. Wash and cut the vegetables into bite-sized pieces.
  3. In a large bowl, toss the vegetables with the olive oil, salt, black pepper, and dried herbs until coated.
