Lemon Cheesecake

Ingredients: For the crust:

  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 4 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 tablespoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1 teaspoon vanilla extract

For the topping:

  • 1 cup sour cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Lemon slices for garnish

Preparation time: 15 minutes Baking time: 1 hour

Instructions:

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted unsalted butter. Mix well to combine.
  3. Press the crust mixture into the bottom of a 9-inch springform pan. Set aside.
  4. In a separate mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer until light and fluffy.
  5. Add the eggs one at a time, beating well after each addition.
  6. Stir in the lemon zest, fresh lemon juice, and vanilla extract. Mix well to combine.
  7. Pour the cheesecake filling over the prepared crust in the springform pan.
  8. Bake the Lemon Cheesecake for 1 hour or until the cheesecake is set in the center.
  9. In a separate mixing bowl, whisk together the sour cream, granulated sugar, and vanilla extract until well combined.
  10. Spread the sour cream mixture over the top of the baked cheesecake.
  11. Return the Lemon Cheesecake to the oven and bake for an additional 10 minutes.
  12. Remove the cheesecake from the oven and let it cool to room temperature.
  13. Chill the Lemon Cheesecake in the refrigerator for at least 2 hours before slicing and serving.
  14. Garnish with lemon slices before serving.
