Kolacky

Kolacky is a traditional Czech pastry that is commonly served during holidays and special occasions. This recipe uses simple ingredients to create a buttery and flaky pastry with a fruity filling. Ingredients:

  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 cups all-purpose flour
  • 1/2 cup fruit preserves (apricot, raspberry, or strawberry)
  • Confectioners’ sugar for dusting

Preparation time: 15 minutes Chilling time: 1 hour Baking time: 15-20 minutes

Instructions:

  1. In a large mixing bowl, beat together the softened butter and cream cheese until creamy and smooth.
  2. Gradually add the flour to the bowl, mixing until the dough comes together.
  3. Divide the dough into two equal portions, and shape each portion into a ball.
  4. Wrap the dough balls in plastic wrap and chill them in the refrigerator for at least 1 hour or until firm.
  5. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. Roll out one of the chilled dough balls on a lightly floured surface until it is 1/8 inch thick.
  7. Use a cookie cutter or a glass to cut the dough into circles.
  8. Place the circles onto the prepared baking sheet.
  9. Spoon about 1/2 teaspoon of the fruit preserves onto the center of each circle.
  10. Repeat steps 6-9 with the second chilled dough ball.
  11. Bake the kolacky in the preheated oven for 15-20 minutes or until lightly golden brown.
  12. Remove the kolacky from the oven and let them cool on the baking sheet for 5 minutes.
  13. Transfer the kolacky to a wire rack and let them cool completely.
  14. Dust the tops of the kolacky with confectioners’ sugar before serving.
