This delicious homemade Cinnamon Raisin Bread is perfect for breakfast, snack, or even dessert. With swirls of cinnamon and bursts of raisins in every bite, it’s sure to become a favorite!
Ingredients:
- 1 cup raisins
- 1 cup warm water (110-115°F)
- 2 tablespoons active dry yeast
- 2/3 cup sugar
- 1/2 cup unsalted butter, melted
- 2 eggs, beaten
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 4-4 1/2 cups all-purpose flour
- 1 egg yolk
- 1 tablespoon water
- 1 tablespoon granulated sugar mixed with 1/2 teaspoon ground cinnamon
Preparation:
- In a small bowl, combine the raisins and warm water. Set aside.
- In a large mixing bowl, dissolve the yeast and 1 tablespoon of the sugar in the warm water. Let stand for 5 minutes or until the mixture is foamy.
- Stir in the melted butter, eggs, salt, cinnamon, and remaining sugar until well combined.
- Add 2 cups of flour to the mixture and stir until smooth. Gradually add more flour, 1/2 cup at a time, until the dough forms a ball and is no longer sticky.
- Turn the dough out onto a floured surface and knead for 5-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
- Punch down the dough and knead in the raisins until well-distributed.
- Divide the dough in half and shape each half into a loaf. Place the loaves in greased 9×5-inch loaf pans. Cover and let rise for 30 minutes.
- Preheat the oven to 375°F.
- In a small bowl, whisk together the egg yolk and water. Brush the tops of the loaves with the egg wash.
- Sprinkle the cinnamon-sugar mixture over the tops of the loaves.
- Bake for 30-35 minutes or until the loaves are golden brown and sound hollow when tapped. Cool on wire racks before slicing and serving.
