Cinnamon Raisin Bread

This delicious homemade Cinnamon Raisin Bread is perfect for breakfast, snack, or even dessert. With swirls of cinnamon and bursts of raisins in every bite, it’s sure to become a favorite!

Ingredients:

  • 1 cup raisins
  • 1 cup warm water (110-115°F)
  • 2 tablespoons active dry yeast
  • 2/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 4-4 1/2 cups all-purpose flour
  • 1 egg yolk
  • 1 tablespoon water
  • 1 tablespoon granulated sugar mixed with 1/2 teaspoon ground cinnamon

Preparation:

  1. In a small bowl, combine the raisins and warm water. Set aside.
  2. In a large mixing bowl, dissolve the yeast and 1 tablespoon of the sugar in the warm water. Let stand for 5 minutes or until the mixture is foamy.
  3. Stir in the melted butter, eggs, salt, cinnamon, and remaining sugar until well combined.
  4. Add 2 cups of flour to the mixture and stir until smooth. Gradually add more flour, 1/2 cup at a time, until the dough forms a ball and is no longer sticky.
  5. Turn the dough out onto a floured surface and knead for 5-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  6. Punch down the dough and knead in the raisins until well-distributed.
  7. Divide the dough in half and shape each half into a loaf. Place the loaves in greased 9×5-inch loaf pans. Cover and let rise for 30 minutes.
  8. Preheat the oven to 375°F.
  9. In a small bowl, whisk together the egg yolk and water. Brush the tops of the loaves with the egg wash.
  10. Sprinkle the cinnamon-sugar mixture over the tops of the loaves.
  11. Bake for 30-35 minutes or until the loaves are golden brown and sound hollow when tapped. Cool on wire racks before slicing and serving.
