Ingredients:

For the dough:

  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1/2 teaspoon salt
  • 1 cup warm milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs

For the filling:

  • 2 cups diced peaches (fresh or canned, drained)
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 4 ounces cream cheese, softened

For the streusel topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons unsalted butter, melted

For the glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Preparation:

  1. In a large mixing bowl, combine the flour, sugar, yeast, and salt. Mix well.
  2. In a separate bowl, whisk together the warm milk, melted butter, and eggs.
  3. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  4. Transfer the dough to a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it doubles in size.
  6. While the dough is rising, prepare the filling. In a bowl, combine the diced peaches, sugar, cinnamon, and softened cream cheese. Mix until well combined. Set aside.
  7. Once the dough has doubled in size, punch it down and transfer it to a floured surface.
  8. Roll out the dough into a large rectangle, about 1/4 inch thick.
  9. Spread the peach, cinnamon, and cream cheese filling evenly over the dough, leaving a small border around the edges.
  10. Starting from one of the long sides, tightly roll the dough into a log shape.
  11. Using a sharp knife, carefully slice the log in half lengthwise, creating two long halves.
  12. Twist the two halves together, creating a braided effect.
  13. Place the braided dough into a greased loaf pan, cover with a kitchen towel, and let it rise for another 30-45 minutes.
  14. Preheat your oven to 350°F (175°C).
  15. In a small bowl, prepare the streusel topping by combining the flour, sugar, and melted butter. Mix until crumbly.
  16. Sprinkle the streusel topping over the risen babka.
  17. Bake in the preheated oven for about 35-40 minutes, or until the babka is golden brown and cooked through. If the top starts to brown too quickly, you can cover it with aluminum foil.
  18. While the babka is cooling, prepare the glaze. In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  19. Drizzle the glaze over the cooled babka.
  20. Slice and serve the Peach, Cinnamon, and Cream Cheese Babka, and enjoy!

Note: You can store the babka in an airtight container at room temperature for up
