- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1/2 cup onion, finely chopped
- 1/4 cup bell pepper, finely chopped
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon dried parsley
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, beaten
For the mashed potatoes:
- 2 pounds potatoes, peeled and cut into chunks
- 4 tablespoons unsalted butter
- 1/2 cup milk or cream
- Salt and black pepper, to taste
For the gravy:
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef broth
- 1 teaspoon Worcestershire sauce
- Salt and black pepper, to taste
Preparation:
- Preheat your oven to 375°F (190°C). Grease a loaf pan and set aside.
- In a large mixing bowl, combine all the meatloaf ingredients. Mix well until all the ingredients are evenly incorporated.
- Transfer the mixture to the greased loaf pan and shape it into a loaf shape.
- Bake the meatloaf in the preheated oven for 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
- While the meatloaf is baking, prepare the mashed potatoes. Place the potato chunks in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes. Drain well.
- In the same pot, melt the butter over low heat. Add the drained potatoes back into the pot and mash them with a potato masher until smooth.
- Gradually add the milk or cream to the mashed potatoes, stirring until the desired consistency is reached. Season with salt and black pepper to taste.
- For the gravy, melt the butter in a small saucepan over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
- Gradually whisk in the beef broth and Worcestershire sauce. Bring the mixture to a simmer, stirring constantly until the gravy thickens. Season with salt and black pepper to taste.
- Once the meatloaf is cooked, remove it from the oven and let it rest for a few minutes before slicing.
- Serve slices of meatloaf alongside a generous portion of mashed potatoes. Drizzle the gravy over the meatloaf and mashed potatoes.
- Enjoy the comforting combination of Meatloaf and Mashed Potatoes with Gravy.
